I am always looking for ways to make food interesting for my girls. They are notoriously hard to feed. I think that if they could live off macaroni cheese and pizza they’d be happy campers the rest of their lives 😉
Cloud parfaits hit the top of my must make food pins when I saw it. I mean… how cute!?! Next time I will make sure to make a smaller version because the girls were unable to finish them!
First you need to whip 16oz or 2 cups of cream. I personally used heavy whipping cream.
When it starts to set up, slowly add the 1/2 cup of granulated white sugar and beat it to super stiff peaks. Then set it aside in the fridge until you need it.
Mix the two packets of blue berry jello with 2 cups of boiling water and mix until it is all dissolved.
Once all the gelatin is dissolved, add two cups of ice. Seriously. It set the gelatin up really quickly. At least up to the point you need to make the parfait. To assemble the parfait put a small amount of jello in the cup, then carefully place blobs of cream against the edge of the cup. Add more jello and cream until you have the look you want. EASY! According to the kids it was super tasty too!
